1932 Trevi, which is a member of the One Window Hospitality and Iris Restaurants network, is renowned for its opulent settings and fine cuisine. Its reputation for high-end dining keeps growing thanks to sister businesses like Idylll and RJ-14. The restaurant’s atmosphere, which draws inspiration from Indian royalty and Italian romance, is as inventive as its food.
Ajay’s culinary adventure
Having completed the Taj Palace’s Indian Hotels Diploma Program, Chef Ajay has worked in renowned restaurants such as Orient Express and Café Fontana. He rose to the position of Executive Chef throughout his nearly two decades with Carnival Cruise Lines, helping to shape the onboard experience across major concepts. He later applied his skills as Director of Culinary at the Pullman & Novotel Aerocity, owned by the Accor Group, where he oversaw 10 locations and won awards for their signature restaurant, Pluck. His global qualifications are further demonstrated by his most recent position at New York’s Aroqa Hospitality, which is featured in the Michelin Guide.
A menu with a backstory
“We aim to create surprise, memory, and meaning in every dish,” Chef Ajay explains. His cuisine philosophy, which is based on freshness and precision, uses products like free-range meats and tree-ripened produce to mix European grace, Asian restraint, and American innovation.
