Salt & Straw, the specialty ice cream maker, is taking a delicious stand against food waste with its latest offering: the Upcycled Food Series. This innovative ice cream line utilizes ingredients that would have otherwise been discarded, giving them a new life and purpose. Flavors like Day-Old Bread Pudding & Chocolate Ganache, Cacao Pulp & Chocolate Stracciatella Gelato, Lemon Curd & Whey, and vegan options like Salted Caramel & Okara Cupcakes and Malted Chocolate Barley Milk are all part of this sustainability-driven initiative.
The Upcycled Food Series is not only a tasty treat but also a sustainable solution. Each item in the line is Upcycled Certified by the Upcycled Food Association, guaranteeing that 38,000 pounds of food waste have been repurposed for these delectable desserts. Collaborating with upcycled food companies across the country, Salt & Straw has developed unique flavors using rescued ingredients. For instance, the Malted Chocolate & Barley flavor was created in partnership with EverGrain, a company that transforms spent grain from beer production into new culinary creations.
Tyler Malek, the co-founder of Salt & Straw, expressed the company’s longstanding commitment to incorporating food waste into their ice cream products. Since 2017, they have been actively exploring ways to reduce waste and elevate the ice cream experience. Through their partnership with the Upcycled Food Association, they have connected with certified companies nationwide to develop flavors that reflect various aspects of the food chain.
The Upcycled Food Series is available at all 32 Salt & Straw locations across the country and online. As summer approaches and millions of customers visit their stores, Salt & Straw sees this new product line as an opportunity to raise awareness about the importance of upcycling and inspire positive change.
This upcycled dessert line follows Salt & Straw’s history of pushing boundaries in the ice cream industry. Last summer, they introduced vegetable-based flavors, incorporating ingredients like carrot, spinach, green fennel, corn, and red chili peppers into their creations, expanding the possibilities of what ice cream can be.
