The opening of Via Bianca, a specialty regional Italian eatery in the famous N Block Market, GK I, New Delhi, was announced by CYK Hospitalities. According to a corporate statement, CYK’s endeavor is to elevate the standard for finely designed F&B concepts that emphasize a fusion of authenticity, operational skill, and innovative partnerships.
A graduate of ALMA in Italy and Le Cordon Bleu in London, chef Kamalika Anand’s ideal project is Via Bianca. After working in Michelin-starred restaurants and other European culinary settings for years, Anand wanted to establish a space that accurately reflected regional Italian cuisine and culinary culture. Tradition is the foundation of Via Bianca, which is served with spirit and presented simply. Highlights of the restaurant include an open kitchen, a pasta shaping station, and a wood-fired oven. The atmosphere is one of subtle elegance, blending the rustic beauty of Italian houses with sleek modernity.
The same attitude was expressed by chef Kamalika Anand: “Via Bianca has long occupied my thoughts and emotions. It is more than just a restaurant; it is an homage to the Italy I loved, studied, and lived in. CYK Hospitalities assisted me in turning a dream into a reality, not just offering advice. Underpinned by their strategic genius, every inch of Via Bianca has a fragment of my journey and labor.
The brand team and CYK Hospitality collaborated to make sure the story was conveyed to an ergonomic operational framework. The essence of Via Bianca was supposed to be present at every touchpoint, whether it was creating a back kitchen process or developing the guest experience. “Via Bianca is a reflection of meaningful collaboration,” said CYK Hospitalities director Pulkit Arora. From planning to execution, we witnessed Kamalika’s enthusiasm and matched it with a sound foundation. This project demonstrates how soulful cooking may coexist peacefully with a market-smart approach.
Delhi’s eating scene is undergoing a quiet revolution thanks to Via Bianca, which is more than just another restaurant. It has demonstrated with sincere accuracy and tenacity that a format driven by regional cuisine can become a milestone in and of itself. With CYK Hospitalities handling the conceptual and operational aspects, Via Bianca will emerge as the capital’s new symbol of immersive eating.
