Mamallapuram, India: Food safety begins in your kitchen — right from sourcing clean ingredients to serving safe food,” said Dr A. Ramakrishnan, Designated Officer, Tamil Nadu State Food Safety and Standards Authority of India (FSSAI), Villupuram, while speaking at a recent food industry event at Mamallapuram.
Kitchen Herald, India’s dedicated B2B culinary media platform, recently hosted its focused HoReCa Meet for members of the Chengalpattu District Hoteliers’ Association (CDHA) at Hotel Guru, East Coast Road, Mamallapuram. The industry meet witnessed the participation of hoteliers, restaurateurs, chefs, caterers and other food business operators from the region, featuring valuable sessions by the Tamil Nadu government officials from the state FSSAI.
In an engaging conversation with the participants, Dr Ramakrishnan urged the entire food business fraternity to prioritise hygiene and statutory compliance. emphasising measures like “using only pasteurised eggs in preparations like mayonnaise and installing 360-degree CCTV cameras to ensure transparency and accountability in food handling.” He also illustrated his points with relevant incidents in and around the Mamallapuram region from the recent past.
At the event, Mr Prasad, Food Safety Officer for the region, gave a practical demonstration using awareness materials. “Simple yet consistent practices — like correct food storage, hand hygiene, and avoiding cross-contamination — make a big difference in handling and serving food items,” he stressed. He further encouraged establishments to use the FSSAI’s resources for internal staff training.
Welcoming the gathering, Mr K. Pandiyan, President of the CDHA, said, “This platform helps our members stay up to date with the latest regulations and improve our service standards.” Mr Jayasimhan, Secretary of the association, thanked the officials and organisers, calling the session “a timely initiative that will help us meet growing customer expectations and regulatory benchmarks.”
