Standardising Recipes Only Way Ahead For Restaurants To Scale Up

Symega Food Ingredients launched B2B foodservice brand 'Cuisinary' which can be used by any restaurant or food outlet

Founded in 2006 and headquartered in Kochi, Kerala in the Southern part of India, Symega Food Ingredients, officially launched ‘Cuisinary’ – Symega’s B2B foodservice brand offering a standard set of products which can be used by any restaurant or food outlet. To cater to the demands of HORECA and QSRs, the soft launch of the Cuisinary foodservice division happened in 2021. With an official unveiling at AAHAR – International Food and Hospitality Fair 2022, Symega has completely changed the brand’s identity and added a number of new products to the portfolio.

Speaking on the occasion, Santhosh Stephen, Managing Director, Symega Food Ingredients said, “We observe that the demand for convenient, high-quality cooking ingredients is booming in the foodservice sector in India. Commercial kitchens are shrinking in the area or getting costlier and manpower is getting scarce. At the same time, consumers are increasingly demanding better quality, variety, and consistency. Cuisinary aims to fill this need gap. We offer chefs the comfort of quality and convenience while letting them be more creative at their craft with a range of well thought out and carefully designed ingredients, keeping a chef’s needs at the core of our brand. Over the next three years, we plan to be an integral part of all commercial kitchens here and aim to cover all of India with an extensive distributor network, across all major cities and towns.”

“Today the consumers are well aware and moving towards standardisation. It is no more the era of creating one cult restaurant. Instead, even F&B brands are focusing on scaling up and it can only happen when recipes are standardised and the same product is being used at every franchise. Symega Food Ingredients leads with a wide variety of products and we have our own infrastructure to produce this internally. Other companies either specialise in seasoning or in the sauces but we cater to all requirements under one head including breaders and coatings, culinary pastes, flavour bursts, marinades, cooking sauces, seasonings, spice powders and blends, sprinklers and whole spices. Our restaurant partners can save up to 20-30 per cent on the ingredient cost with Cuisinary,” highlights Vikas Arora, Business Head – Foodservice Division, Symega Food Ingredients.

Arora feels that the foodservice business is changing. Post the pandemic, there are numerous challenges that the food industry is confronting, be it the shortage of staff, generating better ROI, scaling up, etc. Symega’s proposition to the entire foodservice industry is that it wants the restaurants to focus on innovation and leave the basic work to Cuisinary. Impressario Entertainment & Hospitality Private Limited, Smoke House Deli, Social, etc. are already using Cuisinary.

“So the kitchen staff doesn’t have to do the basic chutney and sauces that they do every day. Also, the consumption pattern of the consumer is changing very drastically. We have created some products with which one will get a very good recipe in just one hour, cutting short the time of marination. So even in the middle of the shift if something gets over, one can still serve more customers and not lose out on business,” adds Arora.

Cuisinary’s Extra Hot and Spicy Marinade and Lime Seasoning are the bestselling products as of now. Any quantity can be ordered, as the price remains the same. Symega Food Ingredients reaches out across India through 42 distributors and 24 field sales forces.
