Pubs are embracing emerging trends ranging from fusion themes to sustainable design and advanced technology integration, shaping the future of the Indian pub industry, ensuring it remains vibrant, engaging, and adaptable to the evolving needs of its clientele,” said Savio Fernandes, Director of Food & Beverage, Copitas, Four Seasons.
“Customers are placing a growing importance on genuineness and artisanal craftsmanship. Restaurants are integrating handcrafted furniture, tailor-made fixtures, and one-of-a-kind art pieces to establish a unique and artisanal ambiance. This imparts a personal and exclusive touch to the environment,” added Anirudh Kheny, Partner, Daysie: All Day Casual Bar.
The Craft Cocktail Renaissance
One of the most noticeable trends in Indian pubs is the rise of craft cocktails. Mixologists are stepping into the limelight, crafting unique concoctions that combine traditional Indian flavors with global mixology trends. Spices, herbs, and local spirits are finding their way into delightful and creative drinks that cater to the evolving palates of Indian consumers. “There’s a continued interest in craft cocktails and mixology. Unique and inventive cocktail creations, often using house-made ingredients and premium spirits, are in vogue. Barrel-aged cocktails and smoked cocktails are examples of the experimentation happening in the cocktail scene,” said Anirudh Kheny.
“The preferences for alcoholic beverages have evolved over the last few years, driven by changing consumer tastes, health consciousness, cultural factors, and a desire for unique and diverse experiences. We have a popular ‘A Greener Future’ menu featuring cocktails inspired by the ethos of using every part of the plant, from seed to fruit, curated to consider sustainability and aiming to make our planet a better place, A Greener Future explores a surprising list of concoctions to sit back and enjoy,” added Savio Fernandes.
Themed and Quirky Decor
Indian pubs are no longer just about drinks; they are immersive experiences. The decor has become increasingly thematic and quirky, offering patrons a change of scenery from their daily lives. Think speakeasies, Victorian-era pubs, and even pop-pop-culture-inspired spaces. The ambiance is designed to transport guests to different worlds. “Maximalist spaces often feature a riot of colours and intricate patterns. Think bold and contrasting colour schemes, intricate wallpapers, and floor coverings that catch the eye. Mix and match different styles of furniture, from antique pieces to contemporary designs. The key is to create a curated chaos that adds interest and uniqueness to the space,” said Anirudh Kheny.
“Experiential dining has taken center stage, with a focus on curated experiences and top-notch food and beverages. Cozy, intimate spaces are favored over larger layouts, cultivating a relaxed environment. Most importantly, customers are always on the lookout for a different aesthetic when visiting a place. Pubs are striving not to disappoint consumers with the ambiance, design, and experience. The key elements of interior design are the use of bold, bright colors and a wide range of furniture. Creating a vibrant and energetic space for socializing has always been the trend, and will always be the trend,” said Divya Aggarwal, Chief Growth Officer, Impresario Entertainment & Hospitality Pvt. Culinary Delights, Local Flavours Trending Pubs in India are no longer limited to just finger foods. The culinary offerings have evolved to include a diverse range of global and fusion dishes. From gourmet burgers and tacos to traditional Indian street food with a contemporary twist, the menu is now as important as the drinks. “I think people are enjoying going back to their roots. They are opting for local dishes with a twist. that sense of familiarity is enticing them away from the pizzas/pasta (unless the restaurant is in that niche),” said Aditi Rao, Co-Founder, of K-OS Game Bar.
“Food plays a big role as it is a part of every pub’s personality. At all our branches, from Indian treats to pizzas, burgers and the very popular “Chakna” – which comes in 4 different types. It not only shows the essence of Indian culture, but the presentation is in the traditional steel-based lunch boxes – “dabbas”. The cuisine offered varies from small snacks to a multi-cuisine catered, which is easy to nibble on along with your favorite drink by your side. Overall, the noticeable trend is our relatable and fun vibe, with small quirky lines like “Paani” written on water glasses. We put in our best efforts to keep up with ongoing topics, since the cricket season is on, we have curated a customized “Stad-Yum” menu for our cricket fans including some curiously themed dishes like the Chauka Chakka Platter, A.B. De Ribs, or the 2011 platter – to incite nostalgia and emotions around the cricket season,” added Divya Aggarwal.
Anirudh Kheny added, “There’s a significant rise in plant-based and vegetarian options, driven by health and environmental concerns. Plant-based burgers, vegan desserts, and creative vegetable-centric dishes are becoming more mainstream. Chefs are increasingly experimenting with global and local flavours and cross-cultural influences. Fusion cuisine, blending elements from different culinary traditions, is gaining popularity. For example, Asian-inspired tacos or Mediterranean-infused sushi.”
Sustainability, A Conscious Choice
In a conscious shift towards sustainability, many pubs in India are redefining their approach to decor and food. Sustainable decor choices involve using reclaimed and recycled materials, incorporating energy-efficient lighting, and embracing eco-friendly design elements. From upcycled furniture to biophilic designs that incorporate greenery, these eco-conscious pubs are transforming their spaces into eco-havens. Additionally, they’re turning to locally sourced, organic ingredients for their culinary offerings, reducing food waste, and implementing innovative, sustainable cooking techniques. This thoughtful approach not only reduces their environmental footprint but also resonates with the growing eco-awareness among patrons, making every visit to these pubs a flavorful and sustainable experience.
“Sustainability is a key focus, with an emphasis on using locally sourced, seasonal, and sustainably produced ingredients. This trend aligns with the growing awareness of environmental issues and the desire for ethically sourced food. Implementing practices to minimize food waste, such as accurate portioning, efficient inventory management, and donation of surplus food to local charities or food banks can be managed. Considering implementation of composting programs for food scraps is the most efficient and sustainable way to run a pub .” said Anirudh Kheny.
Entertainment, A New High
Live music and stand-up comedy are breathing new life into Indian pubs. Patrons can now enjoy a night of entertainment while sipping their favorite drinks. This trend has led to the emergence of an array of venues dedicated to live performances. “Entertainment has become one of the main levers to attract a crowd. People are looking for unique experiences over and above the regular food and drink,” said Aditi Rao.
“Live music, DJs and entertainment add vibrancy and energy to the pub environment, creating a more lively and enjoyable experience for patrons. Live entertainment encourages social interaction among patrons. It provides a shared experience, prompting conversations and connections between guests. Entertainment can extend the length of a customer’s stay at the pub, leading to increased spending on food and beverages. Events serve as marketing tools. They can be promoted through social media and local event listings, attracting a broader audience,” added Anirudh Kheny.
Divya Agarwal added, “Entertainment at pubs isn’t just about established acts; it’s also a platform for emerging talent. We’ve always been passionate about fostering creativity, and providing a stage where new voices and talents can shine. From indie bands to experimental performances, these days pubs serve as a nurturing ground, giving artists a bigger platform to reach diverse audiences.”
Craft Beer Revolution
India is experiencing a craft beer revolution. Brewpubs are sprouting up in various cities, and these establishments are not only serving craft beers but also educating consumers about different styles and flavors. Locally brewed craft beers have become increasingly popular among the discerning crowd.
