The culinary landscape in Southampton just got a vibrant and compassionate addition with the opening of Padharo, an innovative vegan and vegetarian Indian restaurant nestled on East Street. Co-owner Ankit Vaghela, 33, is turning dreams into reality by introducing a culinary haven that caters exclusively to non-meat-eaters, blending traditional Indian recipes with plant-based alternatives.
Ankit Vaghela shared, “My long-standing dream was to create an Indian dining establishment that caters specifically to vegans and vegetarians. At Padharo, we’re on a mission to artfully replicate the authentic flavors and textures of traditional Indian dishes, all while utilizing vegan alternatives.”
Taking the pulse of the local vegan and Asian communities, Ankit recognized an unmet demand for vegan and vegetarian Indian options in Southampton. With over 80% of the meticulously curated menu featuring vegan offerings, Padharo stands as a symbol of inclusive dining.
The culinary team at Padharo employs inventive substitutes such as vegan prawns and plant-based chicken crafted from soy and other plant-derived ingredients. However, the spotlight is on the “chef’s special,” Kaju Paneer, a dish that Ankit enthusiastically endorses, labeling it a must-try culinary delight.
Neha Jadav, 35, Ankit’s sister and the head chef, brings cherished family recipes and culinary traditions to Padharo’s kitchen, infusing each dish with an authentic touch. Having lived in Southampton for five years, Neha often lamented the scarcity of traditional Indian restaurants catering to vegans and vegetarians in the area.
Ankit Vaghela, who previously worked as a restaurant manager in London, decided to make his lifelong ambition of owning a restaurant a reality through Padharo. The launch event held on Friday, August 18, surpassed expectations, serving more than 200 patrons. Ankit expressed his gratitude, saying, “The turnout was truly heartening, and we’re thankful to all who joined us.”
Padharo operates from 5 pm to 10.30 pm, offering a distinctive culinary experience that embraces both Indian culinary heritage and a commitment to ethical dining choices. As Padharo becomes a cherished destination for vegans, vegetarians, and food enthusiasts alike, Southampton’s dining scene is set to savor a new chapter of delectable diversity.
