Wheat-based binder optimises kebab production

-KH News Desk (cbedit@imaws.org)

Process-stable and genuinely firm meat is guaranteed by Loryma’s Halal-certified Lory Bind line.

The halal-certified, wheat-based binding components created by ingredients expert Loryma offer sliced and minced beef rotisserie skewer with the appropriate cut strength and stability.

Due to their outstanding freeze-thaw resilience, the unique binders, which are mostly made of wheat starch and protein, minimise weight loss and thus represent a high-performance alternative to soy-based binding systems.

The wheat protein, often known as gluten, optimises and stabilises the texture while the wheat starch offers the binders a high ability to bind water. Additionally, because the binding substances are sensory-neutral, they have no impact on the traditional beef flavour.

Lory Bind is added during the production process in the usual way. Norbert Klein, Head of R&D at Loryma, comments: “Wheat is at least as suitable as soy in this context due to its functional properties. It’s also easily available thanks to our European farming areas and, despite a general increase in costs in the recent months, it’s still cost-efficient.”

About Loryma
